Happy Father's Day!

This newsletter goes out to the all of the amazing fathers out there and to all the moms who play the role of mom and dad. Dads are an amazing group. I was blessed with one of the best, as were my children and for that I am very thankful.

So how will you be celebrating this Sunday? According to some, dads really just want to stay home and hang out with his family. Many dads enjoy grilling. If this is the case at your house, treat dad to a day of grilling. This is exactly what we are doing. I splurged on his favorite steak - filet mignon. It's funny that I think of this as a splurge when it's still half the cost of taking him out to eat. In addition to steak, I'll be making his favorite loaded skillet potatoes and a homemade cherry pie. Yes - the queen of easy is going all out. No matter what you do for the dad(s) in your life, put your heart into it and they will love it.

The Dish On...

Loaded Skillet Potatoes

This is perfect for dad's grilled steak!

Ingredients:

4 slices bacon
5 red potatoes - skin on, sliced very then
1 cup shredded cheddar cheese
Sour cream - for garnish.

1) In a large skillet, cook bacon until crisp. Remove, crumble and set aside.

2) Reserve 3 T of bacon grease in skillet. Add green onion bottoms (white parts) and cook for about 1 minute. Salt potatoes and add to skillet. Stir well to coat with grease.

3) Cover and cook on low heat for 25 - 30 minutes or until potatoes are tender, stirring occasionally.

4) Turn fire off. Add cheese, bacon and onion tops. Cover again for 2 minutes to let cheese melt. Serve with sour cream.
